Tips & Tricks - 1

فى حاجات صغيرة كدة بتعمل فرق و تجديد ، كل لما أفتكر حاجة إن شاء الله هاكتبها
ممكن تغيرى طعم البانيه بإضافة حبة البركة على البقسماط و ممكن إضافة أى توابل تانية على حسب المزاج
محشى الباذنجان و الكوسة ممكن نسويه بطماطم بيطلع طعمه أحلى كثير
عبارة عن بصل مفروم نقلبه فى سمنة لحد ما يبقى شفاف و نحط عليه عصير الطماطم لحد ما يتسبك . طبعًأ نضيف التوابل اللى نحبها و بعدين نسوى فى الصلصة دى المحشى
أنا بحط خليط الطماطم ده فى خلطة المحشى كمان بس بزود على الخلطة نعناع بيدى طعم حلو فوق الوصف
محشى ورق العنب ممكن نسويه بالصوص اللى كان فى وصفة العرق الرستو ، الصوص ده عبارة عن خلاصة اللحمة مع الطماطم و الثوم و اليمون و البهارات فتخيلوا بقى قد إيه المحشى هايبقى طعمه حلو

انا بحب حبة البركة في كل حاجة بس المحشي بطماطم حيبقى طعمه شبه الطبيخ احنا بنحط ايوة نعناع بس لكن تسبيكة لأ ممكن طمطماية مهروسة مع الشوربة بتاعة التسوية

Actually, I kind of know wasfet el basterma bas I never tried to make it at home. khalty kanet bet3melha. It is really tricky.

bos ya sidi, aham 7aga fi el basterma el la7ma, 3er2 without any fats, then mal7 kheshen. you cover the meat in salt, and u put if fi 3elba 3ala ma2as el la7ma and the most important thing enak te7ot fo2ha to2l, something heavy, really heavy.
el matloob mn keda en el la7ma tetala3 all the fluids in it, fa wheneever u feel en el donia malayna fluids ermeeha and put new salt to catch more fluids.
after that, tekoon megahez khalta, salt, garlic, shata, 7elba and u cover your meat bel khalta di, and te3ala2ha fi makan fih tayar hawa.
and most importantly, mesh rotooba
and tesbha keda for at least three weeks 3ala 7asab the size of 7etet el la7ma, then u have basterma

bas seriously, if at any step of preparation you got suspecious en fi 7aga 3'alat, or something look wrong or smell wrong, don't keep on throw it away 3alatool. things should never at any step smell funny, it will smell like basterma mesh ay 7aga tanya.
once u cut it, keep it on the fridge, or preferably in ur freezer, and nasee7a our parents lama kano beyza32olna for eating basterma raw, kan 3andhom 7a2, fa don't ever over consumate it raw, always expose it to some heat :)

It is serious food posioning we are talking about here.

1- red meat, no fat...successful
2- mal7 kheshen wekbess..betshorr mayya, as per plan successful
3- took me a while until I figured out what was 7elba in English but successful
4- shatta!!! I doubt but I got some and kammelt el ba2y felfel arna2oty (ana faker mama aletly en el felfel el arna2oty gives the same taste but not hot).
5- el khalta,..I added equal quantities of all of these (including garlic), awwalan it smells more of a garlic paste than basterma, saneyan mefarwela khales we mesh 3aref hatemsek 3alla7ma ezzay!!!...failure

el felfel el arana2ot will be as good, if it smells like garlic not like basterma add more 7elba, el ree7a kolaha mn el 7elba :)

el mafrood enak betet7an kol el 7agat di ma3 ba3d fa it will form a paste we isa hatmsek 3ala el la7ma
just ekbesha kowayes 3aliha, try enak telafaha be shash le7ad ma temsek 3ala el la7ma kowayes. it is not supposed enaha to2a3 mn 3ala el la7ma.
add salt to that paste, good amount of salt fa hatkhaly el maya elly fi el toom tetla3 wel paste temsek fi ba3d.

aham 7aga fi el mawdoo3 koloh el salt, because it is the thing that will preserve the meat.

3 days el mafrood, to make sure all fluids are out.

after u cover it bel khalta, aham 7aga to hang it fi makan fih tayar hawa we mesh rotooba, le2n el rotooba betbawazha. el hawa haynashef el khalta and in 3 weeks el mafrood tekoon gahza lel akl

aham 7aga keep ur nose open for any change in smell

walahy nefsy ab3tlak basterma wa afar 3aliek el tagroba :)

I tried one of your recipes, I tried to make a Negresco. awwalan el béchamel tele3 ghaleban 3aginet 3eish, wel akla nafsaha tel3et 7aga tanya gheir el negresco.
I'll call it 'nehresco' and I'll post the recipe sometime.....

el bachamel lw tele3 zay 3agenet el 3iesh this means en el de2ee2 zeyada, you needed more liquid.
you can always control how thick it will be.
Start with two spoons of flour, a cup of milk, and tell me.

la el wasfa momken matkonsh mazboota awy awy bardo, maho asl ana mafish 7ad 3alemny el tabeekh :) et3alemt trial and error bezzabt the same way you are doing now.

You can try the pizza, it is easy and mahma bazet will still be eatable mesh nehresko :)

I have noticed a very strange phenomenon on the Basterma!!!
2 of the three pieces I hanged are getting harder, while the third is getting much softer than before, it actually feels a little harder than a sponge now. I tried to smell it but no funny smell is coming out of it.
I'm cutting this one to see what's going on.

This could be a scene in a scary movie.
As soon as I got the knife through the meat, hundreds of maggots crawled everywhere even before I finished cutting.
The meat actually looks like a sponge, with a deep blue colour (like a fresh bruise, even darker).
The maggots are everywhere now and sprays don't seem to have much effect on them.
I wont throw that thing in the bin, I think I'll burn it in the backyard.
Sorry for the disgusting story.
I failed.

It actually decayed like a dead thing :( I can't believe this happened ...
But you still have the other two pieces that went firm.

If all failed, I promise you I will freeze you a stock of basterma so lama teegy isa takhdoh wenta mesafer. And a cup of coffee to erase the memory of that scary scene :)

I couldn't wait so I cut one a week earlier than you advised, it's still a bit plump and raw on the inside, but what the heck I have basterma, a bit too salty also but it's still basterma to me.

I can't believe myself, this is the best thing I heard that week.
You can't imagine that I started to have nightmares about this basterma after the scary scene of living creature coming to life out of a piece of sponge that was originally a piece of meat.

فكرة التسبيكة لتسوية المحشى بتدى طعم حلو قوى . أنا كنت متعودة أسوى محشى الكوسة كده و فى يوم قلت طيب ما نجرب مع الباذنجان و طلعت لطيفة و ما كنش بحط نعناع على خلطة محشى الباذنجان و لما حطيت لقيته جميل و تجديد .
بس مش بحط كسبرة ناشفة ، هاجرب المرة الجاية الكسبرة الناشفة مع الخلطة إن شاء الله

على فكرة عملت الزلابية و طلعت جميلة

I have more than 6 kgs of the basterma now, and I have already started my business!!!!
I have two work mates who are interested in this type of food. I trade the basterma with a white south african for biltong and I trade with a greek for mullet roe (batarekh).
Both of them said it was addictive (the greek knows it by the way, and it's called Pastourma in greek).

Freezer?? la2 tab3an. I'm consuming it fe koll 7aga. beid bel basterma, rozz bel basterma, snacks (biscuits and chips bel basterma), I got an electric bread baker we 3amalt bread bel gebna el cheddar wel basterma, plus the trades, and the rest is still cooking fel garage.
Since it is a business now, I had to secure the garage, I got a huge camping fly screen (3ashan el maggots) and rat baits everywhere around the area, dy floos nas mesh la2yenha fel share3!! bass really ana mesh 3aref ha3mel eh fel 6 3oroo2 elly 3andy dol lamma yestewo!
Amma 3an el gezira fal gozor hena keteer, shoofy enty bass 3ayza el na7ya el ba7areyya walla el ebleyya.

I found el 7elba in a chinese shop, akid I can find it somewhere else bass ana khalas et3awwedt aroo7 henak. Awwalan because it's close to a huge butcher where you can buy lumpsum quantities of meat. ya3ny momken takhdy kharoof, noss, keda. we kaman noss ba2ara noss aww rob3 tor, elly enty 3ayzah.
El mohem ana koll esboo3 aroo7 ashtery kilo 7elba we kilo felfel arna2oty we kilo tom mafroom nashef.
El bent ezzaher shakket feyya fa sa2aletny enta saken hena?
(I live around 20 km from this place) fa oltelha la2 and then she asked where do you live and I told her Sunnybank, fa aletly enta beteegy leh hena fa oltelha 3ashan ana bashtery el la7ma men big gun we agy ageeb el spices men 3andoko.
