Tuna Fingers


2 medium sized potatoes boiled & mashed
2 cans Tuna drained
1 small onion finely chopped
1 garlic glove finely chopped
Dill, parsley (whatever green u think would go with tuna if you have any)
Salt, cumin to taste
Flour, eggs, & bread crumbs to cover
Oil to fry

Mix the mashed potatoes, tuna, greens & the rest of ingredients then shape into fingers.  Roll the fingers in flour then put in eggs then bread crumbs. Fry in hot oil. Serve hot/ warm or cold. Perfect in all forms.

You can add whatever you think goes with tuna. & if you don’t have bread crumbs I add an egg to the mix & then rolled the fingers in flour & fried them. It worked perfectly.
